Hyderabad Karachi biscuit

I love the city of Hyderabad and the food that's made there everything from biryani to haleem to qubani ka mitta n these yummy biscuits from karachi bakery....here is my tried n tested recipe

INGREDIENTS:

All purpose flour 2 cup Castor sugar 1/2 cup Baking powder -1/2 tsp Milk powder 2 tbsp tutti fruiti red 1/3 cup tutti frutti green 1/3 cup Unsalted butter 100 gm Coarsely chopped cashew nuts 1/2 cup Vanilla essence 1/4 tsp

METHOD: 1.In a mixing bowl add butter and sugar mix until fluffy.

2.Now add vanilla essence and mix it well.

3.Then add flour, baking powder and tutti frutti and make a soft dough.

4.Now combine the flour n remove it on a work surface n dust some flour n roll it in to 1/2 inch thickness remember it should not be too thin.

5.Now take chopped cashewnuts and spread on the rolled dough roll the rolling pin with light pressure, so that all chopped cashewnuts get embedded in the dough

6.Cut cookies into desired shapes or just square n then place them on baking sheets and put it in the fridge for half an hour.

7.preheat the oven at 170 c for 10 min and bake the cookies for around 10 min. keep an eye on it. As soon as cookies turn a little brown take them out. let it cool completely.Then store in air tight jar.

Notes:

#Butter should be on room temperature #butter n flour mixing you can use this trick. Take butter and mix sugar in it. Add dry ingredient slowly kneading constantly. When you see the dough is soft and bonded fully with butter stop adding all purpose flour. This way u know how much flour u need #u can also use cashewnuts powder instead of chopped cashewnuts ...if using powder mix it along with the flour Recipe partially adopted from Rajeshwari Ganesh n cook click n devour
