Homemade Biltong Spice

Here's my home made biltong spice recipe. This is by far my personal favourite. 1 Tablespoon of brown sugar, 1/2 cup paprika, 1/2 cup coriander seeds crushed, 1 tablespoon ground black pepper ,1 tablespoon salt, 4 tablespoon chili powder (you can use as much as you like), 1 tablespoon onion powder. Instead of using garlic powder, use dried crushed garlic including surrounding peel. Mix all together and enjoy. It should look similar to the picture when complete. This can also be used as a great steak rub for any braai occasion. For the best chilli chutney bites simply take this spice mix, add half a bottle of Mrs Balls Extra Hot Chutney per 2Kg's mix together and place into a bowl.... place your cut silverside slices and mix by hand. Leave overnight and hang for roughly 3 days. You will find the bites to be almost like a jerky texture but still the classic chilli bites we all know and love. Enjoy smile emoticon
