Flame-Braaied Fillet

INGREDIENTS For the steak rub, you’ll need: Equal Quantities of: Coriander seeds Mustard seeds Maldon salt Mixed peppercorns Crushed garlic {Put all of the steak rub ingredients into a mortar and pestle and bash them until you have a nice, crumbly rub.} You’ll Also Need: A decent sized fillet Olive oil Sunflower oil Put all of the steak rub ingredients into a mortar and pestle and bash them until you have a nice, crumbly rub. WHAT TO DO: Rub the fillet with olive oil and then rub the spice mixture all over the fillet – be generous! Make sure the coals are nice and hot, then seal the fillet on the fire. Once it’s sealed on both sides, drizzle with sunflower oil and let the flames lick (not burn) the one side. Turn the meat around and do the same on the other side. Remove the fillet from the heat, let it rest for about 5 minutes and the cut the meat into friend-size portions. Braai over moderate coals until done to your liking.
