Cucumber soup

Ingredients for Cucumber Soup:

- Three cucumbers (diced) - 1 onion (chopped) - 3 tablespoons parsley (chopped) - 2 l (8½ cups) of water with 4 chicken bouillon cubes or 2l (8½ cups) chicken stock - pepper and salt

How to make Cucumber Soup:

Slice onions very thinly. Cut the Cucumber into cubes. Heat the oil in a pan and add the onions, saute over a medium heat till they are golden and translucent. Add the water with the chicken bouillon cubes (or the chicken stock) and te Cucumber cubes. Bring the water to a boil and boil for 5 minutes, and simmer for 10 more. Remove from the heat and with a stick blender whizz the mixture in the pan. Put the pan back on to the heat. Just bring back to the boil and then turn off the heat. Add a dash of salt and pepper. Check the soup for seasoning and then serve as soon as you like.
