Mediterranean Soup

Ingredients for Mediterranean Soup:
- 1 lb. Shrimp, peeled and deveined - 1½ lbs. Grouper fillet, cubed into 1" squared - 8½ cups ( 2 l) of water with 4 fish bouillon cubes or fish, seafood or shrimp stock - 4 garlic cloves, peeled and minced - 1 orange, juiced and the Zest of two oranges - 3 cup fennel bulbs, chopped - ½ cup tomato, peeled, seeds removed, and chopped - 2 celery ribs, finely chopped - 2 tbsp. tomato paste - olive oil ( 3tbsp) - pepper and salt
How to make Mediterranean Soup:
In a large soup pot, pour the water with the fish bouillon cubes or the fish stock and place on the stovetop over medium heat. Wash all of the shrimp, peel, and devein. Cut the grouper into 1" ( 2½ cm) squares. Add in the fish, vegetables, wine, olive oil, orange juice into the stock and bring to a roaring boil. Cook until the vegetables are soft and the shrimp and grouper are cooked, about 20 to 25 minutes. Reduce to a simmer and simmer for 15 minutes before serving.
