Onion soup

Ingredients:

- 900 gr (2 lbs) onions thinly sliced - 6 tb olive oil - 1,5l (6 cu) water - 2 chicken bouillon cubes - 1/2 tsp. salt - French bread or hard toast - 1 cup of grated swiss or gruyère cheese - 2 tablespoons olive oil

Preparation:

Slice onions very thinly. Heat the oil in a pan and add the onions, saute over a medium heat till they are golden and translucent. Stir continually. Add the water and bouillon cubes. Bring the water to a boil and boil for 5 minutes, and simmer for 10 more. Add the salt and pepper. Stir well. Toast the bread at 325 degrees F (165 degrees C) for 10 minutes. Pour soup into bowls, float bread and add cheese. If the bowls are ovenproof bowls, you can place the filled bowls under the broiler to brown the cheese.
