Thai Sweet Potato soup

Ingredients for Sweet Potato Soup:

For 6 Persons:

- ½ kg (1,1lb) sweet potatoes, peeled and diced - 1 onion, roughly chopped - 1 garlic clove, finely chopped - 250 g (½ lb) carrots, chopped - 1 l (4,2 cups )of water with 2 vegetable bouillon cubes or vegetable stock - 1 small red pepper - 1 tbsp soy sauce - 1 tbsp olive oil - 55 g ( 2 cups) flour - Coriander (to taste) - 2 dl coconut milk - pepper and salt

Preparation:

Put some oil in a pan and saute the onion, the carrots and potato cubes about 10 minutes. Stir the flour into the mushroom mixture.

Add the water and vegetable stock cubes or the vegetable stock and let it simmer for 20 minutes. Puree the soup and add the coconut milk, soy oil and coriander.

Enjoy!
