Zucchini soup

Ingredients:
- 1,5 l (6 cups) water - 4 zucchini (peeled) - 4 onions chopped - 2 fat cloves of garlic - crushed - 3 tomatoes peeled and cut into chunks - 4 chicken bouillon cubes - Salt, pepper and curry powder to taste - 2 tablespoons olive oil
How to make it:
Slice onions very thinly. Remove the seeds of the zucchini and cut into cubes. Heat the oil in a pan and add the onions, saute over a medium heat till they are golden and translucent then turn down the heat and add the garlic. Sweat for ten minutes until soft. Add the water, chicken bouillon cubes, the sliced tomatoes and te zucchini cubes. Bring the water to a boil and boil for 5 minutes, and simmer for 10 more. Remove from the heat and with a stick blender whizz the mixture in the pan for about 30 seconds. Put the pan back on to the heat. Just bring back to the boil and then turn off the heat. Add a dash of salt, curry powder and pepper. Check the soup for seasoning and then serve as soon as you like. Enjoy!
