Cheese croquettes

Ingredients:
- 60 gr (2,1 oz) butter - 140 (5 oz) gram flour - 2 dl (0,8 cu) full cream milk - 350 gr ( 12,4 oz) grated cheese - 2 egg yolk - parsley - pepper, salt and nutmeg - bread crumbs - 2 egg white mixed with 2 spoons of water or milk
Preparation:
Melt the butter and add the flour to make a roux. Add bit by bit the milk and heat until you have a thick and smooth mass. Add the cheese and let it all melt together. Then add the egg yolk. Add pepper, salt and nutmeg according to your taste. Place the mass on a foil covered plate and place this in the fridge until the mass becomes stiff. Divide the mass in portions. Dip the portions in the egg white and than in the bread crumbs. Then again dip them in the egg white and in the bread crumbs. Let the croquettes rest for an hour. Bake the cheese croquettes for 5 minutes in the deep fryer on a temperature of 345 degrees F or 180 degrees C. Let the croquettes leak on paper and then serve them with deep fried parsley, a lemon and mixed salad on the side. Enjoy!
