There’s always that one colleague who makes packing a lunchbox look like an art, leaving you to fall for the lure of fast food – a knock to your pocket and your health. But with a little know-how, you can produce enviable, nutritious lunches too.
Try these simple tips:
Second time around The simplest way to win in the game of lunchbox making is to pack some good leftovers. This doesn’t require much prep work, just ensuring there’s enough food for tomorrow’s lunch when making dinner. Curries, pasta dishes, fried rice are all just as great at 1pm, as they were at dinner the night before. You can also give leftovers new life with a bit of mayo before sandwiching between slices of fresh bread.
Leafy greens Whether it’s fruit or vegetables, a salad is a quick and healthy way to fill up at lunch time. Cut and toast bite-sized pieces of bread to make homemade croutons for added texture. Pro tip: Pack the ingredients separately in sealed containers to prepare just before you eat (no-one likes a wilted salad).
Something on the side Pack some healthy snacks to ensure you get all the nutrients you need. Have a side of nuts, crackers, biltong, a muffin or dried fruit to avoid snacking on junk food or having all your lunch before midday. Keeping the servings small reduces chances of over-eating.
Hydrate No amount of fizzy cooldrink or low fat drinking yoghurt will quench your thirst the way water does. Add fruit slices like orange or strawberry to your water for some inexpensive flavour. Try not to focus on exactly how many glasses you should have and just start drinking water. By making it a habit, you’ll soon get used to drinking plenty of water to stay hydrated and refreshed throughout the day.
Get organised Take time to plan what goes into your lunchbox and where possible, pack your lunch the night before so it isn’t a chore or rushed the next day.
