Gebakte vis in geurige tamatiesous

1 Braai 1 fyn gekapte ui in 30 ml (2 e) botter tot goudbruin. Gooi 30 ml (2 e) gekapte knoffel by en braai vir nog 3 min. 2 Voeg 125 ml (½ k) rooisoetrissiepesto, 20 ontpitte groen olywe, 2 ansjovisfilette, 30 ml (2 e) gerasperde suurlemoenskil, 5 ml (1 t) paprika, 12 slaaitamaties, geskil en gekap, by en prut vir 15 min. oor lae hitte. 3 Geur 6 x 200 g-porsies witvis met sout, gemaalde swartpeper en 20 ml avokado-olie. Hou eenkant. 4 Pak die vis in ’n oondvaste bak en gooi die sous oor. Bak vir 40 min. by 200 °C. 5 Haal uit die oond en laat rus vir 15 min. Sprinkel ’n hand vol vars pietersielie oor en sit met koeskoes voor.
