Amasi Bread

INGREDIENTS 500 g Bread Flour 20 g Coarse Sea Salt 20 g Sugar 20 g Honey 10 ml Chilli Flakes 10 g Instant Yeast 350 ml Amasi/Buttermilk 5 ml Baking Soda Warm the amasi gently until it’s lukewarm, then add the honey and baking soda and stir to combine. Add the instant yeast, stir and leave to rest for 30 minutes until frothy. Mix the bread flour, salt and sugar together then add dried chilli flakes. Make a well in the centre of the flour and pour the amasi mixture into the middle. Use your hands to fully incorporate mixture until you have a dough. The dough may be a bit runny, but fear not, just work it using a dough scrapper (stretching and pulling the dough as much as possible to develop that gluten). Knead the dough for at least 15 minutes. Cover the dough with cling film and leave to double in size in a warm spot for an hour. Once the dough has doubled in size, lightly knock it back down and place in a greased Dutch oven. Sprinkle coarse sea salt over the top, pop on the lid and bake over moderate coals for about 40 minutes (put some coals on top of the lid to create an all-round oven). When bread is ready it will sound hollow when tapped and will come out the Dutch oven with ease. Turn out and let it rest for 10min before serving with real butter! Lekker bak en brou....
