Apple and Sage Pork Loin

1 Tbsp. Flour 1 ½ tsp. Sage 1 tsp. minced Garlic 1 tsp. Thyme leaves ½ tsp. Salt ½ tsp. Allspice ½ tsp Paprika ½ Pork Loin Roast 1 Apple Mix dry ingredients in small bowl. Pat the pork loin dry, Trim excess fat off bottom. Rub the dry ingredients onto all surfaces of the loin. Place in a roaster or roasting pan. Cut slits in the top of the loin. Core and wedge the apple. Put apple wedges in the slits you cut in the pork loin. Cover and Bake at 325 degrees for about 1 hr 15 min or until internal temp reaches 160 degrees. (18-20 min per pound) Remove loin and let rest for 5-10 min before serving. Add a little water to the pan to deglaze and make a gravy from that – no extra seasoning required. Note: I used a spoon of mashed potatoes for a little thickening to the gravy.
