Roasted Potato Salad

Ingredients 3 potatoes (cubed evenly) 1 tblsp olive oil Salt Pepper Thyme
Method Cube potatoes with the skin on. Season with salt and pepper. Add thyme and olive oil and bake at 180deg for 40 mins until crisp and golden brown.
Make a sauce as follows 1/2 cup mayonnaise or sour cream 3 Tblsp parsley (chopped fine) 1 tblsp finely chopped dill 1 green chilli 3 cloves garlic (optional) 2 tblsp olive oil
Blend the above to make a sauce. Season lightly if required.
Pour sauce over potatoes and add half a finely chopped red onion.
Serve warm.
