Strawberry Heart Pie

Ingredients and directions for the pie filling:
Ingredients 1 cup mashed strawberries 3/4 cup water, or more if needed 3/4 cup white sugar 3 tablespoons cornstarch 1 tablespoon lemon juice 1/4 teaspoon salt 4 cups sliced strawberries
Directions Combine mashed strawberries and 3/4 cup water in a saucepan; bring to a boil and simmer for about 3 minutes. Strain juice from cooked strawberries and add enough water to make 1 cup juice. Discard pulp. Combine sugar, cornstarch, lemon juice, and salt in a saucepan; stir strawberry juice into sugar mixture. Bring to a boil, stirring constantly, until clear and thick, 3 to 5 minutes. Remove from heat and cool slightly. Stir sliced strawberries into strawberry sauce.
Ingredients and directions for the pie crust:
Ingredients 4 cups unbleached flour 3/4 cup shortening 3/4 cup unsalted butter 1 egg, beaten 2 1/2 teaspoons white sugar 1 1/4 teaspoons salt 1 tablespoon lemon juice 1/2 cup ice water
Directions Place flour in a large bowl. Cut in shortening and butter until mixture is crumbly. In a separate bowl, mix together egg, sugar, salt, and lemon juice. Make a well in the center of flour mixture. Pour in all of egg mixture and half of ice water. Stir gently with a fork, adding more water as needed, just until mixture forms a ball. Turn dough onto a floured surface and cut into 4 equal portions. Knead each piece briefly and shape into a disc. Chill 1 hour before rolling out. Roll out the pastry to a thickness of 3mm. Cut a big circle for the bottom of the pie. Cut heart shapes and layer from the outside to the middle as shown on the photo. Bake in a preheated oven untill the crust is crisp and golden brown.
