Savoury Fish Swiss Roll

Swiss Roll:
60g Soft Butter
125ml Cakeflour
500ml Milk
2ml salt
5ml Colmans Dry Mustard
5ml sugar
4 Eggs, separated
2ml cayenne pepper
3 Spring Onions
1ml peper
Filling:
250g Cottage Cheese Spring Onion Flavour
200g Hake Fillet Fish (Steamed)
1ml Finely Grated Lemon Peel
Peper to taste
Salt to taste
30ml Sour Cream
1ml Cayenne Peper

Swiss Roll
To make the swiss roll, place butter,cakeflour,milk in a mixer and mix well.
Place the wellmixed mixure in a pot and simmer for 1 to 3 minutes while whisking till its smooth and thick. Take it off the stove and add salt,mustard,sugar and whisk. Add the egg yellow in the hot filling and mix well. Last add the egg white usingg a wooden spoon fould it in lightly. Use a 20x30 cm gresed swiss roll pan with wax paper and spread the swiss roll mixture in the pan. Bake in a oven 160c hot oven for 1 hour or till brown. Take it out and cool down
Mix the filling ingredients all together and spread it over the swiss roll and roll it up quickly.
Serve with a cream cheese sauce and springle mix herbs and cayenne peper
