Melrose samoosas

A quick and easy snack to make when you’re craving cheese and crispy pastry.

Makes 8 large samoosas

4 sheets ready-to-use phyllo pastry 60 ml (1/4 cup) oil 8 Melrose wedges

Preheat the oven to 190 ºC and grease a baking tray with oil. Cut each sheet of pastry in the length into four evenly sized strips. Brush each strip with a little olive oil. Top half the pastry strips with the other half, so you end up with 8 double strips of pastry.

Put a Melrose wedge at the top of each strip of pastry and fold the pastry over, to form a triangle. Fold it down, to make another triangle and repeat this process until you reach the end. Arrange on the baking tray and bake for 20 minutes, until golden brown and crispy. Serve with a dip of your choice.
