Ingredients:
30 ml Olive oil 1 Large onion, chopped 1 clove Garlic, crushed 500 g Lean minced meat 1x 410 g can Tomato purée 5 ml Dried origanum 5 ml Salt Freshly ground black pepper to taste 2 Large potatoes, cooked and sliced 1 Aubergine, sliced and grilled Yoghurt topping:
450 ml DairyBelle Greek Yoghurt 2 Eggs 250 ml DairyBelle Cheddar Cheese, grated
Method:
1.Heat oil in a heavy-based frying pan, add onion and garlic and sauté until translucent. Add minced meat and stir using a fork until meat turns colour. Add tomato puree and seasoning, reduce heat, cover with lid and simmer for 25 minutes. 2.Layer mincemeat, potato and aubergine in a greased ovenproof dish. 3.Beat yoghurt, eggs and half of cheese together. Pour yoghurt mixture on top and sprinkle with remaining cheese. 4.Bake in a preheated oven at 180°C for 40 minutes. Serve hot.
