Caprese salad skewers

Serves 4 - 6
6 slices Blue Ribbon super toaster white bread, crusts removed 2 garlic cloves, crushed 60 ml (¼ cup) olive oil 125 g mozzarella cheese, cut into 5 mm thick slices (about 3 slices) 5 cherry tomatoes, cut into 5 mm thick slices 16 fresh basil leaves 8 wooden skewers extra olive oil for drizzling salt and freshly ground black pepper
Cut each bread slice into four squares. Place on greased baking trays. Combine the garlic and olive oil and brush the bread squares with the oil. Bake in a preheated oven at 200 °C for 8 - 10 minutes or until golden brown. Let cool slightly. Cut mozzarella slices into about 2 x 2 cm pieces. Thread the bread, mozzarella, tomatoes and basil leaves onto the skewers. Place skewers back onto greased baking trays. Drizzle with extra olive oil and sprinkle on the seasoning. Place in a preheated oven at 200 °C for 2 - 3 minutes, just until mozzarella starts to melt. Serve immediately.
