Chicken Cordon Bleu Nuggets

Here's a great alternative to the boring chicken nugget for the kids! Or serve them as appetizers at your next party.
Ingredients: • 2 eggs, large • 1 tsp water • 1 cup breadcrumbs, seasoned • 1 tsp thyme, dried • 1/2 cup all-purpose flour • 1/4 tsp salt • 1/4 tsp black pepper, ground • 6 deli sliced cheddar cheese, about 5 oz • 6 deli sliced ham, about 5 oz • 1 large chicken breast, boneless skinless
Instructions:
Preheat the oven to 385°F/195C.
Spray 2 baking sheets with cooking spray.
In a small bowl, whisk:
2 eggs, large
. 1 tsp water
On a plate, combine:
1 cup breadcrumbs, seasoned
1 tsp thyme, dried
On another plate, combine:
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp black pepper, ground
Cut each slice lengthwise into 4 long strips:
6 deli sliced cheddar cheese , about 5 oz
6 deli sliced ham , about 5 oz
Cut into 1-inch chunks: 1 large chicken breast, boneless skinless
Lay 12 ham strips on a work surface.
Top each ham strip with a cheese strip.
Place a chicken chunk toward the end of each strip and roll up to enclose the chicken.
Working with 1 chicken nugget at a time, lightly coat with the flour.
Next, dip into the egg mixture.
Cover each egg-dipped chicken nugget with the breadcrumbs.
Transfer seam side down to the prepared baking sheets.
Generously spray the nuggets with cooking spray and bake until crisp, about 20 minutes.
If not crisping, place under broiler for 3 minutes
