Curry Bites

Makes 40 These tasty snacks are similar to Malay dhaltjies but this version is ridiculously easy to make.
Ingredients 500ml (2 cups) self-raising flour 5ml (1 t) baking powder 3ml (1/2 t) ground coriander 3ml (1/2 t) borrie 3ml (1/2 t) cumin 5ml (1 t) salt 1 tin (410g) Rhodes Curried Mixed Vegetables 2 extra-large eggs, beaten oil, for deep-frying
Method Mix the flour, baking powder, coriander, borrie, cumin and salt together in a dish. Combine the mixed vegetables with the curry mixture and eggs, and add the dry ingredients. Mix to form a stiff mixture (add a few drops of water if it’s too stiff). Heat enough oil for deep frying in a pan or saucepan and fry teaspoonfuls of the mixture until puffed up, golden brown and cooked. Drain on kitchen towel and serve luke-warm. Useful Tips Make small bites to serve with drinks or large ones as snacks while watching TV. Serve the larger bites with chutney as a dipping sauce. Add 2 finely chopped chillies to the vegetable-and-egg mixture for extra bite. Make your own self-raising flour by adding 5ml (1t) baking powder to 250ml cake flour.
