The perfect appetizer for just about any get together, sandwiches are always a hit. With some egg salad, you can turn a standard party food into something spectacular by arranging it as a snake on the serving tray!

Directions:

Lay the bottom piece of mini-buns on a platter in a snake-like formation. Top each bottom with a scoop of egg salad and a slice of tomato, topping each mini sandwich off with a piece of red leaf lettuce. Place the top piece of each bun on each sandwich. Slice several cherry or grape tomatoes in half, and push a toothpick through each one. Secure each sandwich together with a toothpick-skewered tomato. Slide a green onion cut like a snake tongue into the front sandwich, and top it off with two black olives for the eyes.

Guests will truly be wowed by this presentation, and you can certainly prep this ahead.
