PEPPERONI PIZZA PUFFS

¾ cup flour ¾ teaspoon baking powder ¾ cup whole milk 1 egg, lightly beaten 1 teaspoon Italian seasoning 2 teaspoons fresh chopped basil (you can substitute dried – 1 teaspoon) 4 ounces (125g) mozzarella cheese, shredded 4 ounces (125g) pepperoni, cut into small pieces or use the mini pepperoni Pizza sauce for dipping.

HOW TO: Preheat the oven to 375F/190C. Grease a 24-cup mini muffin pan. In a large bowl whisk together the flour and baking powder, whisk in the milk and eggs. Stir in the mozzarella and pepperoni. Let stand for 10 minutes. Stir batter and divide among the mini muffin cups. Fill almost to the top. Bake until puffed and golden, about 20 – 25 minutes. Serve with pizza sauce for dipping.
