Sausage Meatballs

Ingredients
8 pork sausages 4 spring onions, finely chopped with some green parts 180 ml fresh breadcrumbs 1 beaten egg 2.5 ml ground coriander 30 ml finely chopped parsley 125 ml flour oil for frying
Chef's hint: As usual, you can make this recipe you own by adding your own flair. You can, to begin with, use beef sausage. And then, you can add mustard powder to the flour. You can also add a small chuck of cheese to the center of each meatball. It all depends how much time and money you want to spend!
Method
Squeeze the meat out of the sausage casings into a bowl. Add the spring onion, breadcrumbs, egg and coriander and get stuck in there with your clean hands and mush it all together.
Combine the parsley and flour and sprinkle onto a board. With your hands, shape the meat mixture into meatballs the size of golf balls.
Heat a little oil and fry gently until golden brown and cooked through, about 15 minutes, turning regularly. Drain on kitchen paper and place in a warm oven to rest for about 4 minutes after cooking.
Serve with mashed potatoes, mushy peas, and home-made Monkeygland sauce.
