Makes: 40
Ingredients:
1½ cups store-bought salsa or pasta sauce, drained over a sieve
½ cup (1 doz pack) roughly chopped pitted black olives
1 cup grated mozzarella
½ cup freshly grated Parmesan
1 x 500 packet puff pastry, defrosted in the fridge
Method:
Preheat the oven to 180ºC and line two baking sheets with baking paper. Unroll the chilled puff pastry onto a board and cut into four rectangles. Divide the filling ingredients between each rectangle: first spread on the salsa then sprinkle over the olives and cheese. Carefully roll up each rectangle into a “Swiss roll”. Wrap snugly in cling film and store in the fridge for up to a day. Unwrap and cut each roll into eight to 10 slices. Lay slices flat on the baking sheet, allowing ½ cm between each one. Bake for 20-30 minutes until puffy and golden brown.
