Mexican Dips: Cheese & chorizo dip

[Serves 4]
5 slices chorizo, chopped 1 cup cheddar, grated 1 cup mozzarella, grated ½ cup ricotta cheese Sea salt and black pepper Nachos chips to serve Fresh coriander to garnish
1. Preheat oven to 180°C. Heat a small pan over a medium heat, add chorizo and fry until crispy. Remove and drain on paper towel. 2. Mix together all the cheese. Transfer to a buttered ovenproof dish and bake, uncovered, for 10 minutes. Remove from oven, add chorizo, then bake uncovered for 5 minutes. 3. To serve: Serve hot with nachos, garnished with fresh coriander.
