Mushroom tarts

Serves: 4 Preparation time: 15 minutes Baking time: 20 minutes Oven temperature: 200°C

• 1 roll puff pastry, defrosted • 12-16 brown mushrooms, depending on size • 1 large egg, lightly beaten • about 200g feta cheese, crumbled • 100ml pesto in any choice of flavour, to serve • salad, to serve

1 Use a cookie cutter to cut out pastry circles about the same size as the mushrooms. Place on a lined baking sheet and brush with the egg.

2 Wipe the mushrooms clean with a damp cloth and use a small knife to cut out the stem. Place the mushrooms onto the pastry discs. Mix the feta with the remaining egg and season with salt and freshly ground black pepper. Spoon the feta into the mushrooms and press lightly.

3 Place in a preheated oven and bake for 15-20 minutes, or until the pastry is golden and puffed. Garnish with pesto and serve immediately with salad.
