PIZZA PUFFS

These savoury snacks are ideal to serve with pre-dinner drinks.
Ingredients:
400 g ready to use puff pastry 500 ml (2 cups) cheddar cheese, grated 1 onion, finely chopped ½ red bell pepper, diced ½ green bell pepper, diced 200 g bacon, diced 2 tomatoes, peeled and seeded, diced 30 ml (2 tablespoons) fresh parsley, finely chopped 2 eggs salt and black pepper to taste
Preparation:
Preheat the oven to 200 ºC (400 ºF). Grease 2 x baking sheets. 1. Cut the puff pastry into 5 cm diameter discs and place them onto the baking sheets. 2. Mix the rest of the ingredients together and place heaped teaspoons of the mixture onto the center of each pastry disc. Bake in the oven for 15 minutes and serve immediately.
