Spinach & Mozzarella Bites

Make these deliciously warm Spinach & Mozzarella Bites, using Bakers Spring Onion flavour KIPS, that drip with cheese from the centre. Great for party platters!
Ingredients o 100 g (1/2 pack) Bakers KIPS , o Spring Onion flavour o 65 ml olive oil o 1 – 2 large garlic cloves o 125 ml basil leaves o 250 ml firm mashed potato o 500 ml cooked spinach, o drained well and chopped o salt and milled black pepper o ground nutmeg o 250 g mozzarella cheese, cut into 2 cm cubes
Directions Process the Bakers KIPS, olive oil, garlic and basil in the processor into coarse crumbs. Mix together the mashed potato and spinach and season well with the salt, pepper and ground nutmeg. Take a spoonful of the mixture and flatten it slightly in your hand. Place a cube of mozzarella in the centre of the mixture and fashion it around the cheese into a ball. Roll the ball in the crumb mixture, patting the crumbs into the ball. Continue until you have used all the spinach mixture. Bake on a greased baking sheet in a pre-heated oven at 190 ºC for 10 – 15 minutes or until the cheese inside has melted. Serve warm.
Makes about 20. PS: Make sure the mashed potato and spinach are quite dry and firm before using. If not, your bites may go very pear-shaped in the oven!
