Biltong cheese puffs

Makes 12
180ml vegetable oil
1/4 packet (125g) Sasko Quick Treats Pancake Mix
1/4 cup finely grated biltong
2 tsp finely chopped herbs (rosemary, thyme or sage)
3 large eggs
285ml milk
pinch of salt
1/4 cup finely grated sharp cheddar cheese
Preheat the oven to 230C. Fill each hole of a muffin tin with about 1 tbsp oil then place the muffin tin in the oven to heat up. Sift the pancake mix into a bowl then add the biltong, herbs, eggs and milk to make a smooth batter then allow to stand for 10-15 minutes. Then remove the tin from the oven and pour the batter to fill ¾ of each hole. Turn the oven down to 200C and return the tray to the oven and bake for 20-25 minutes or until the puffs are risen and golden. Sprinkle over the cheese and return to the oven to melt. Serve as soon as they come out of the oven.
