Cod Fritters with Garlic Potato Puree - Bakaliaros Skordalia

Our very best recipe for the most fluffy and super tasty cod fritters! Cod fritters are a very popular dish in Greece throughout the year, but especially on the celebration of 25th March. Traditionally, this dish is made with salt cod fish, which is soaked in water for at least 48 hours, in order to leach the salt. If you wish to avoid this lengthy process, prepare the cod fritters with some fresh cod fish, which is even better, though a bit more expensive. Ideally serve with some greek-style garlicky mashed potatoes (skordalia sauce) and enjoy a delicious and healthy meal!
Ingredients • 1-1.2kg of salted cod • vegetable oil for frying • -For the batter • 500g water • 500g all-purpose flour (plus some extra for dredging) • 330ml beer • 10g dry yeast • a pinch of salt • -For the Skordalia • 1 kg potatoes, boiled • 4 cloves of garlic • 1/2 cup of olive oil • 1/2 cup of milk • 1/3 cup of red wine vinegar or juice of 2 lemons • salt to taste
Method Step 1 To prepare the cod fritters, it is very important to leach the cod fish from the salt. To do that, soak the fish into same water and put in the fridge. Leave it for 3 days and change the water 3 times a day. If you like you can buy some fresh cod fish and skip this procedure. Step 2 When done, dry well the fish with paper towel and remove all the bones. Cut into small bites, 4-5 cm. Step 3 To prepare the batter for the cod fritters, add into a bowl the beer, the water and the yeast and mix with a whisk, until the yeast is dissolved. Add the rest of the ingredients and whisk, until the batter is smooth. Step 4 Into a deep frying pan, heat the oil to high heat. Add some four into a bowl. Take one piece of cod and dredge into the flour, shaking it to remove the excess flour and then deep it into the batter, flipping it on all sides. With spoon remove the cod from the batter and put it slowly into the hot oil. Dip the spoon into some water and repeat with the rest of the pieces. Deep fry the cod fritters, until nicely coloured on all sides, fliping them, using a slotted spoon. Remove from the pan and place on some paper towel to drain. You should fry the cod into batches, so that the surface of the pan is comfortably filled. If you fry them all together, the temperature of the oil will lower and they won't be cooked right. Step 5 To prepare the skordalia, boil the potatoes. In the meantime heat the milk, along with the garlic(peeled). As soon as it comes to the boil, remove the pan from the stove. Into a food processor add all the ingredients, apart from the oil and blend. Slowly add the oil and continue mixing, until the mixture is smooth. Alternatively, you can mash the potatoes with a fork; add the oil and the garlic into a blender and mix, pour into the mashed potatoes along with the rest of the ingredients and blend. It is essential, that the potatoes are hot, when preparing the skordalia.
