Haloumi salad skewers

Olive oil 200g haloumi cheese, cut in 2cm cubes 1 punnet cherry tomatoes 1 small cucumber, cubed with seeds removed Small wooden skewers Salt and freshly ground black pepper Fresh basil
1. Heat a little oil in a frying pan and pan-fry cubes of haloumi for 3 to 5 minutes, tossing regularly until golden brown all over. Remove haloumi cubes to cool to room temperature. 2. Thread a cherry tomato, cube of cucumber and cube of fried haloumi on to a small skewer. Repeat process with remaining ingredients. 3. Arrange skewers on a serving dish. Season with salt and pepper, then scatter with chopped basil. Serve at room temperature.
