Home-made pork scratchings

Remove the fatty skin layer on your pork chops and save ‘em for an indulgent snack some other day.

Time Less than 1 hour Serves: 4

1 piece pork skin 4 centimetres PnP sunflower oil 5 ml ground fennel seeds 1 PnP bay leaf, crumbled 5 ml PnP dried chilli flakes 5 peppercorns 45 ml sea salt flakes

Method

Preheat oven to 180°C. Cut 20 x 30cm of pork skin into 2cm pieces. Simmer in salted water for 30 minutes. Drain, spread on a baking tray and bake until dry, about 30 minutes. Heat oil in a pan and fry skin in batches until puffed up, blistered and crispy. Drain on kitchen paper. Grind fennel seeds, crumbled bay leaf, PnP dried chilli flakes, peppercorns and sea salt flakes in a pestle and mortar, scatter over scratchings and serve. Makes 4 cups.
