Using an old-time favourite, these Marmite and Cheese Twists are fun to eat and taste great!
INGREDIENTS
660ml (22/3 cups) bread flour 3ml (½ t) salt 5ml (1t) sugar 10g packet active dry yeast 250ml (1 cup) lukewarm milk 30ml (2T) olive or avocado oil
FOR THE FILLING
60ml (¼ cup) Marmite 15ml (1T) butter, melted 375ml (1½ cups) Cheddar cheese, grated 1 egg yolk 5ml (1t) sesame seeds
METHOD
Combine the flour, salt, sugar and yeast. Make a well in the centre and mix in the milk and oil until a dough forms. Turn the dough out on to a floured surface and knead for about 5 minutes until smooth and elastic. Transfer to a lightly greased bowl, cover with plastic wrap and allow to rise for about 1 hour until doubled in size. Preheat oven to 200°C. Line a baking tray with baking paper. Heat the Marmite and butter together in the microwave for about 1-2 minutes until melted. Divide the dough into two balls and roll each out on a floured surface into 25cm rounds. Place one circle on the prepared tray and brush with the Marmite mixture, leaving a 1cm border, then top with cheese. Place the second dough circle on the top. Place a glass in the centre and press it lightly to make an indent. Space out 2cm markers around the dough and cut on the markers towards the inside where the glass rim starts to form (about 20 strips). Twist each strip about three times. Brush the top of the centre with the egg yolk and sprinkle sesame seeds over the centre. Bake for about 20 minutes until golden and cooked. Cool on the tray. Serve lukewarm.
