Mediterranean beef rolls

Serves: 4 Preparation time: 20 minutes Cooking time: 15 minutes

• 8 small beef schnitzels • 2 cloves garlic, crushed • 45ml sun-dried tomato pesto • 100g feta, crumbled • 1 large egg, beaten • flour, for coating • 100g dried breadcrumbs • oil, for frying

1 Top each beef schnitzel with garlic, pesto and feta. Roll up and secure with a toothpick. Dip each roll into the egg, then into the flour and then the breadcrumbs.

2 Heat a thin layer of oil in a large frying pan and fry the rolls for 10 to 15 minutes, until golden brown and cooked through. Serve with baby potatoes and salad.
