Volkoringbeskuitjies

Hou die beskuitjies vars in ’n lugdigte houer. Sowat 14 beskuitjies, na gelang van hoe groot jy dit uitdruk

150 g (250 ml) volkoringmeel (nutty wheat) 240 g (750 ml) hawermout 100 g (110 ml) botter, in blokkies gesny 65 g (80 ml) bruinsuiker 60 ml heuning 60 ml melk

Verhit oond tot 180 °C. Meng volkoringmeel en hawermout in ’n mengbak. Vryf botter met vingerpunte in die meelmengsel in tot dit soos broodkrummels lyk. Voeg suiker by en meng deur. Plaas heuning en melk in ’n kastrol en verhit effens. Voeg by meelmengsel en meng tot deeg vorm. Knie deeg goed saam. Rol dun uit op ’n meelbestrooide oppervlak en druk sirkels uit met koekiedrukker. Plaas op bakplaat wat uitgevoer is met bakpapier. Prik beskuitjies met ’n vurk en plaas in oond. Bak 10 minute. Haal uit en laat afkoel op afkoelrak.
