Cheesy Roly Poly

. For the dough:
250g cake flour
2 tsp baking powder
Pinch salt
75g unsalted butter, diced
1 cup grated parmesan
225ml of milk
For the Filling:
230g cream cheese
1 cup grated cheddar cheese
½ tsp cayenne pepper
2 Tbs chopped basil
Salt and black pepper
1 Buffalo Mozzarella ball, sliced
Preheat oven to 180C. In a bowl, combine flour, baking powder and salt. Rub in butter until the mixture resembles breadcrumbs. Mix in the grated parmesan. Mix in enough milk to form a cone-like dough. Roll dough out on a floured surface to form a rectangle shape. Mix together cream cheese, cheddar cheese, cayenne and basil then season. Spread onto the rolled out pastry. Top with the mozzarella slices. Roll pastry up from one end to the other to form a spiral that encases the cheesy filling. Slice the roly poly into 2cm thick slices then place onto a lined baking tray, cut side up. Bake the roly poly slices for 20 – 30 minutes or until golden brown. Best served warm.
