Maize meal balls

Serve these maize balls as a side dish or simply with some spicy dips for something a little different for dinner.

Makes 12 balls

Preparation time: 20 min

Baking time: 20 min

250 ml (1 c) cake flour

250 ml (1 c) soft cooked maize meal

1 egg

5 ml (1 t) baking powder

250 ml (1 c) grated Cheddar cheese

250 g bacon bits, cooked

oil for shallow-frying

1 Preheat the oven to 180 °C.

2 Mix all the ingredients except the oil until well combined and set aside.

3 Heat the oil in a frying pan. Add spoonfuls of the batter to the oil and fry until golden brown all over. Drain on kitchen paper.

4 Put the balls on a baking sheet and bake for 15-20 minutes. Serve with chutney or salsa.
