EASY SPINACH AND RED KIDNEY BEAN STIR-FRY

INGREDIENTS:

3 tsp olive oil 2 handfuls spinach ½ can KOO Red Kidney Beans In Brine, drained and rinsed 1 tbsp onion, finely chopped 1 tbsp tomato, deseeded and finely chopped 1 tsp chilli, deseeded finely chopped Slices of avocado

KITCHEN GADGETS:

Frying pan, wooden spoon, sharp knife, chopping board

METHOD:

Heat the frying pan to a medium temperature. Drizzle in the olive oil and fry off the onions until they are just translucent. Then add the spinach, turning often until it wilts. Once the spinach has wilted, add the red kidney beans, tomato, onion and chili. Stir well and cook until heated through completely. Remove from the frying pan and portion onto serving plates. Serve with avocado slices.
