FETA AND ZUCCHINI FRITTERS

Ingredients
4 courgettes, grated and the liquid squeezed out (about 1 full cup)
50g feta cheese
1 egg, lightly beaten
1 tsp thyme, chopped
4 garlic cloves, finely chopped
Mint, to garnish
1/4 cup fresh parsley,finely chopped
2 1/2 cups flour
4 small spring onions, finely chopped
125ml breadcrumbs (preferably panko)
salt
1 tsp pepper
vegetable oil, for frying
lemon wedges to serve
ready made tzatziki to serve
Cooking Instructions
Grate the courgettes and then place them in a tea towel and wring out all the liquid. You want the grated courgettes to be as dry as possible. Place in a bowl and add the flour to coat the grated courgettes.
Add all the other ingredients and mix to combine.
Heat the oil in a non-stick frying pan and fry dollops of the mixture, turning when golden brown on the one side. Drain on paper towel and serve with fresh lemon wedges and tzatziki.
