GINGER AND MINT SPARKLING MULES

Ingredients
1 cup mint or coriander microgreens, to garnish 1/4 cup crystallised ginger, finely chopped 1/4 cup sugar for the egg whites more ice, for serving 4 cups ginger beer
Cooking Instructions
Using a mortar and pestle, muddle 1 cup mint with crystallised ginger and sugar. Spoon into a jug and top up with soda water or ginger beer and crushed ice. Enjoy in frosted glasses.
