ROASTED SHALLOT TART WITH GOAT'S CHEESE & HONEY

Ingredients

1 kg shallots, sliced into 1cm-thick rings olive oil, to drizzle 2 tbs balsamic vinegar sea salt and freshly ground black pepper, to taste 1 sheet ready-made puff pastry, thawed egg yolk, beaten 100g soft goat's cheese (chevin or chevre) micro rocket (or other micro herbs) honey

Cooking Instructions

Pre-heat the oven to 150°c. Peel and halve the shallots then toss with the olive oil, Balsamic, salt & pepper. Place in a roasting dish and place in the oven. Allow to roast slowly for 45 mins – 1hour until they are soft and caramelised. Remove the shallots from the oven then turn the heat up to 180°c. Place the thawed pastry on a baking tray and lightly score a 1cm border around the edge of the pastry. Place the roasted shallots and crumbled goat’s cheese inside the border then brush the border with the beaten egg yolk. Place the tart into the oven and allow to bake for 20-25 minutes until the pastry is puffed and golden brown. Remove from the oven, scatter over the micro leaves and drizzle with honey before serving.
