SPICE-ROASTED BUTTERNUT

Ingredients
500 g butternut
3 Tbsp olive oil, to drizzle
1/2 tsp ground cumin
1/4 tsp turmeric
1 1/2 tsp smoked paprika
1\4 tsp chilli powder
A pinch salt
2 sprigs fresh rosemary, to garnish
1 fresh chillies,sliced
Cooking Instructions
Pre-heat the oven to 200°c.
Halve the butternut then remove the seeds. Slice the butternut into large chunks/slices. (You can peel the butternut if you’d like but the roasted skin becomes soft and a little chewy when cooked.)
Toss the butternut with the oil and all the spices, salt and rosemary then transfer to an oven-proof dish.
Place in the oven and bake for 30-35 minutes until the butternut is cooked through and golden brown.
Remove from the oven, garnish with fresh chilli and serve.
