BAKED BEAN POTATOES

Serves: 4
INGREDIENTS: 4 medium baking potatoes 65 ml sour cream Crushed garlic, to taste Salt to taste 2 tbsp. chives or parsley, chopped 1 can (410 g) Rhodes Baked Beans in Tomato Sauce 80 g tasty cheese, grated (cheddar)
METHOD: Wash potatoes well. Pierce each one once with a sharp knife and bake in a preheated oven at 180°C until tender. Remove from the oven and allow to cool down enough to handle. Slice the tops off the potatoes and scoop out the flesh. Mash the flesh with the sour cream, garlic, salt and chives (or parsley) and spoon back into the potato shells. Heat the Rhodes Baked Beans in Tomato Sauce, spoon over the potatoes, top with grated cheese and serve.
