BERRY AND WHITE CHOCOLATE MOUSSE

Serves 2
INGREDIENTS: 100 g (1 slab) good quality white chocolate, broken into pieces 350 ml fresh cream 2 ml (½ tsp.) vanilla paste or vanilla pod seeds Selection of fresh berries 1 granola or energy bar, chopped Mint to garnish
METHOD: Heat the chocolate, 50 ml cream and vanilla paste or seeds in a glass bowl over boiling water or in the microwave until the chocolate has melted. Leave to cool without allowing to set. Whip the remaining cream until stiff and fold into the chocolate. Layer the mousse and berries in glass bowls or on a platter. Sprinkle granola on top. Chill for 4-5 hours. Garnish with mint.
