WHOLE WARM BREAD WITH ROASTED PINEAPPLE, CAMEMBERT AND PISTACHIO SALT

Ingredients
1 round sourdough bread
1 whole pineapple, freshly squeezed from 8-10 pineapples
8 tsp honey
125 g camembert, sliced
125 g camembert, sliced
pistachios
30 ml Maldon salt, to season
4 sprigs thyme leaves, finely chopped
Cooking Instructions
Preheat oven grill.
Place the pineapple rounds onto a greased baking tray. Drizzle with honey and place under the grill to caramelise. Remove and cool down.
Preheat the oven to 180ºC.
Use the size of the cheese as a template and carefully cut a round out of the top of the bread to fit the cheese into.
Place bottom half of the Camembert cheese into the bread. Place half the pineapple slices, overlapping each other on the bottom half of the cheese, and top with half the pistachio nuts. Place top slice of cheese back and sandwich together. For a crisp outer crust, lightly brush the crust of the bread with a pastry brush dipped into a little water.
Garnish the top of the bread with remaining pineapple slices. Place in oven and bake for 10 - 20 mins. Remove from oven.
Chop the remaining pistachio nuts coarsely and combine with salt. Sprinkle over cheese when it comes out of the oven.
