Bhelpuri is a puffed rice dish with some vegetables and sauces. Every Bhelwala has his inimitable blends of chutneys and masalas. The proportions of the various chutneys can be changed to adjust to your personal preferences. Bhelpuri is best consumed as soon as it is made. If left for a while, the juices from the tomatoes, chutneys, etc. combine to render it soggy. Bhel puri although can be served in any way as pleased, it is almost invariable served in a paper folded in the form of a cone and it is consumed using a paper spoon made by folded card.
Ingredients:
4 cups puffed rice (kurmura) 1 cup chivdas 1/2 cup chopped onions 1/2 tomatoes, chopped 8 tbsp imli ki chutney 4 tsp green chutney 1 tsp salt 1/2 tbsp lemon juice salt to taste
For the garnish:
1 tbsp finely chopped raw mango (optional) 4 tbsp Sev few crushed papdis or puffed puris 2 tbsp coriander leaves
Method:
1. Toast the puffed rice to make the bhel crisp before using it to make bhel. 2. Lightly crush and add the chivdas. 3. Combine all the ingredients in a large bowl and toss gently till all the ingredients are well mixed. 4. Divide into 4 equal portions and garnish each portion with the papadis, raw mango, sev and coriander. 5. Squeeze some lemon juice. Serve immediately.
* Green Chutney: 1/2 cup mint leaves, 1/2 cup coriander leaves, 1 green chillie, 1/4 " ginger, 1/2 tsp sugar or jaggery, salt to taste. Grind to a fine paste adding a few tsps of water.

Tips:
1. Nylon sev is a very thin variety of deep fried besan sev used as a topping for chaats. It is readily available at most provision stores. 2. Chivdas are namkeens or spicy mixtures made from shev, boondi, peanuts, besan sticks, etc.
