BROWN SUGAR FLAMED PINEAPPLES

Ingredients
70 g pineapple, chopped
4-6 granadillas, sliced in half
250 g sabrosa strawberries, whole with stalks, leaves removed
100 g treacle or brown sugar
Cooking Instructions
Carefully remove the insides of the pineapple in one piece by using a sharp paring knife.
Remove insides and slice into wedges. Keep the half pineapple boats.
Sprinkle pineapple boats, pineapple wedges and strawberries generously with sugar.
Place a large pan on a hot fire and heat up until warm. Sear the pineapple boats, skin side showing up for a few seconds allowing the sugar to caramelise.
Remove and do the same with pineapple wedges and strawberries. Add half the granadillas into the pan with skin on.
Add a sliced red chilli if you like and add a splash of tequila.
Serve pineapple boats filled with caramelised strawberries and pineapple. Drizzle with squeezed granadilla.
Serve with fresh cream, creme fraiche or ice cream.
