CAESAR- STYLE TENDERSTEM BROCCOLI SALAD

Ingredients
200 g Woolworths black pepper wood-smoked streaky bacon
4 white bread
130 g tenderstem broccoli tips, half raw and blanched
2 cos lettuces, halved
parmesan shavings, for servings
basil leaves, to garnish
4 free range egg yolks
1 Tbsp wholegrain mustard
6 Tbsp lemon juice
2 Tbsp white balsamic vinegar
2 Tbsp sunflower oil
4- 6 anchovies
50 g Parmesan, grated
freshly grounded pepper, to taste
Cooking Instructions
Preheat the grill.
Place the bacon on a baking tray in a single layer and place under the heated grill.
Cook the bacon until crispy, then remove from the oven and allow to cool slightly.
Place the cubed bread onto the same tray and swirl to coat with the bacon fat.
Place under grill and toast until golden brown on both sides.
Remove from the oven and set aside.
To serve:
Place the broccoli and cos lettuce on a platter.
Place the bacon and shaved Parmesan on the side.
Drizzle with the dressing and scatter over the croutons.
Garnish with the basil leaves.
To make the dressing:
Place the egg yolk, mustard, lemon juice and vinegar in a blender and gently blend.
Slowly add a little oil at a time while the blender is running to make a smooth mayonnaise.
Add the anchovies and Parmesan and blend. If too thick, add a little iced water.
Season to taste with pepper.
