CHEESY CORN LOAF

Ingredients
  • 1 cup kernels off the cob

  • 50 g butter

  • 1 egg

  • 2 Tbsp cold water

  • 200 ml single cream

  • 2 tsp white sugar

  • 1/2 lemon, cut into 8 slices for garnishing

  • A squeeze lemon, juiced

  • 1/2 cup Parmesan, finely grated

  • 2 Tbsp oil

  • 90 g flour

  • 2 tsp baking powder

  • 2 Tbsp sesame seeds, toasted

  • salt and pepper

Cooking Instructions
  1. Preheat oven 180 degrees.

  2. Blend together the corn, butter, 2 egg yolks, water, cream, sugar, lemon (juice and zest), Parmesan and oil.

  3. Add 1 cup flour, 1tsp baking powder and salt to taste.

  4. Whisk egg whites until stiff and fold into batter.

  5. Sprinkle with poppy seed and or sesame seeds.

  6. Bake in a greased loaf pan for 35 minutes or until slightly golden brown and skewer comes clean.
