CHEESY CORN LOAF

Ingredients
1 cup kernels off the cob
50 g butter
1 egg
2 Tbsp cold water
200 ml single cream
2 tsp white sugar
1/2 lemon, cut into 8 slices for garnishing
A squeeze lemon, juiced
1/2 cup Parmesan, finely grated
2 Tbsp oil
90 g flour
2 tsp baking powder
2 Tbsp sesame seeds, toasted
salt and pepper
Cooking Instructions
Preheat oven 180 degrees.
Blend together the corn, butter, 2 egg yolks, water, cream, sugar, lemon (juice and zest), Parmesan and oil.
Add 1 cup flour, 1tsp baking powder and salt to taste.
Whisk egg whites until stiff and fold into batter.
Sprinkle with poppy seed and or sesame seeds.
Bake in a greased loaf pan for 35 minutes or until slightly golden brown and skewer comes clean.
